Pineapple Fried Cauliflower Rice

Ingredients

1 bag of frozen cauliflower rice

2-4 chicken thighs (cut into cubes)

1 carrot, grated

1 onion, diced

1 inch of ginger root, grated

2 cloves of garlic

Thin slices of green scallions

2 tbsp. of coconut aminos or GF Tamari

Fresh or canned without syrup Pineapple

Optional: 1-2 scrambled eggs (and put aside)

Optional: 1/4 cup whole cashews

Instructions

  1. Scramble eggs and thinly slice then put aside.

  2. Sautee chicken in avocado oil for 2-3 minutes and add onion, carrots, garlic and ginger.

  3. Once tender add 1/2 to 1 bag of frozen cauliflower rice and cover with a lid.

  4. Once cauliflower is tender add pineapple and cashews and cook for another 2-3 minutes.

  5. Add your aminos or tamari and scallions.

  6. Serve with scrambled eggs as garnished.
