Grain-free Cinnamon Rolls
Ingredients
1. **Dough**:
3/4 cup coconut flour
1/2 cup almond flour
1/2 cup dry curd cottage cheese (aka farmer’s cheese)
1/2 cup butter (or coconut oil)
1/2 cup honey
1 tsp pure vanilla extract
1 tsp baking soda
3 eggs
2. **Filling**:
6 dates, softened and pitted
1 tbsp water
2 1/2 tbsp cinnamon
1/2 tsp ground ginger
2 tbsp honey
1 tbsp grapeseed oil (or butter/ghee)
3. **Glaze/Icing**:
1 can refrigerated coconut milk (cold)
1/8 cup honey
1 tsp pure vanilla extract
Instructions
1. **Dough**:
Blend the coconut flour, almond flour, and baking soda together in a food processor.
Add the dry curd cottage cheese and blend again.
Add the wet ingredients (butter, honey, vanilla extract, and eggs) and mix until well combined.
Remove from the food processor and shape the batter into one log.
2. **Filling**:
Soften the dates in hot water for 5 minutes.
Mix the dates with the water, cinnamon, ginger, honey, and grapeseed oil.
3. **Assembly**:
Roll out the dough into a rectangle.
Spread the filling evenly across the dough.
Roll up the dough into a log and slice into 3 cm chunks.
4. **Baking**:
Preheat your oven to 350°F (180°C).
Place the cinnamon rolls in a buttered 10-inch (25cm) skillet or round baking pan.
Proof the cinnamon rolls in a warm place for about 1 hour 15 minutes to 1 hour 30 minutes, or until about doubled in volume.
Bake for 35 minutes, loosely covered with aluminum foil for the first 20 minutes.
5. **Glaze/Icing**:
Mix the coconut milk, honey, and vanilla extract.
Drizzle over the warm cinnamon rolls.
