Grain Free Breakfast Chiquitas

Ingredients

  • 1 cup soaked and cooked black beans (do this the day before)

  • 1 medium yellow onion

  • 1 jar Siete enchilada sauce or make your own!

  • 5 radishes

  • 2 avocados

  • 1 package grain free tortillas or make your own!

  • 4-6 eggs

  • Optional: cheese, vegan cheese, sour cream, vegan sour cream

  • Optional: chopped cilantro

Instructions

Toast your grain free tortillas up in a pan until lightly toasted. Take a large casserole pan and rub a light coat of avocado oil in the bottom of the pan. Take 1/4 of the enchilada sauce and spread around the bottom of the casserole dish. Place a layer of your tortillas and then top with the black beans and chopped onions. Cover with the rest of the enchilada sauce, crack your eggs on top and then add your radishes, cheese and cilantro. Bake at 350F for 30 minutes, checking to make sure the eggs aren’t over cooked (you want the yolks to be a little runny). Once out of the oven top with guacamole or fresh avocado.
