Bacon Dijon Brussel Sprouts

 

Ingredients

1 pound brussel sprouts

1/3 pack bacon (we like thick cut)

1 yellow onion

3 tbs dijon mustard

2 tbs honey

salt & pepper

Instructions

Start a large pot of water and bring to a boil. While the water is heating up wash your brussel sprouts and cut in half and remove the very end of the stem. Once the water has come to a boil, add your brussel sprouts cook for 5-8 minutes until barely fork tender.

While your brussel sprouts are cooking chop your onion and bacon into 1/2 inch pieces and put into a cast iron pan or skillet and saute’ until the onions are translucent and the bacon starts to brown. Strain the brussel sprouts and add to the pan with the bacon and onions. Saute’ for 5-8 minutes or until the brussels start to get some browned parts. Add you dijon mustard and honey. Mix well. Add salt and pepper to taste. Cook for another 3-5 minutes. And serve!
